Traditional Method
Our Pink Sparkling Wine, produced using the traditional champagne method. This involves a first fermentation where the natural sugar in the grapes converts to alcohol, whilst allowing the resultant carbon dioxide to escape. This produces the base wine which is then blended and bottled, after which a second fermentation occurs in the bottle. The bottles are then aged, during which time they are stored at 35% angle (cap down) & turned on a daily basis (remuage in French) for the duration of the aging process.
"Les Malicieuses" Rosé
The "Cheeky" Rosé; in honour and recognition of my young daughters when we produced our first sparking rose. This has grown in popularity over the years, just like the girls!
