This involves a first fermentation where the natural sugar in the grapes converts to alcohol, whilst allowing the resultant carbon dioxide to escape. This produces the base wine which is then blended and bottled, after which a second fermentation occurs in the bottle. The bottles are then aged, during which time they are stored at 35% angle (cap down) & turned on a daily basis (remuage in French) for the duration of the aging process. Restoring Piqueroque was a Herculean task, filled with challenges at every turn. AOC The Controlled Origin (AOC) designation has been a crucial aspect of the wine industry since the 1930s. It ensures that wines meet strict standards of quality and authenticity. Wines with the AOC label must adhere to precise production and vinification techniques and originate from specific geographical areas. This designation is a symbol of excellence within the industry, signifying a commitment to tradition and exceptional quality.​ IGP Established in 1992 for food products and expanded to include country wines in 2009, the Indication Géographique Protégée (IGP) designation offers more lenient specifications compared to AOC. However, it's important not to equate IGP wines with inferior quality to AOC wines. The appellation itself does not guarantee the taste or quality of a wine; rather, factors such as grape variety, vinification techniques, and terroir play crucial roles in determining wine quality, irrespective of IGP or AOC designation. Ultimately, while the label can provide a certain level of assurance regarding quality, nothing surpasses the experience of a tasting to form one's own opinion and preferences. HVE The High Environmental Value (HVE) certification is a voluntary environmental certification scheme implemented in France. It aims to recognize and reward agricultural and forestry operations that demonstrate a high level of environmental performance. HVE certification focuses on four key areas of environmental stewardship: biodiversity conservation, plant protection strategy, management of fertilization, and water resource management. To achieve HVE certification, farmers and foresters must meet specific criteria and demonstrate their commitment to sustainable practices.
